M'borokhé (Peanut Sauce with Spinach)

Ingredients:

300g mutton or beef, cubed
3 tbsp peanut butter
500g spinach, washed and shredded
2 spring onions, chopped
1 leek, chopped
1/2 tsp powdered okra
2 tbsp groundnut oil
1 tomato, blanched, peeled, de-seeded and chopped
salt and freshly-ground black pepper, to taste
hot chilli powder, to taste

Method:

Heat the oil in a pan, add the meat and fry until browned all over. Add the tomato and stir to combine.

Mix the peanut butter to a smooth paste with 120ml water and add to the pan. Mix in the finely chopped leek and spring onions along with the okra powder and spinach. Add more water if needed then bring to a simmer, cover and cook gently over low heat for about 90 minutes, or until the meat is tender and the sauce is thick.

Serve hot with rice or foutou.
