This is a Berber-style dish from northern Mauritania, with a lamb and vegetable stew (similar to Mauritian bonava) served on a bed of millet and wheat flour pancakes.

Ingredients:

For the Pancakes:
125g (1 cup) wheat flour
60g (1/2 cup) millet flour
1/2 teaspoon sea salt
180-360ml (3/4 cup to 1 1/2 cups) water to blend (use more or less as necessary)

For the Lamb Stew:
500g (1 lb) lamb cut into bite-sized pieces
2 carrots peeled and chopped
2 tomatoes chopped
2 potatoes peeled and chopped
2 green or red bell peppers cored and chopped
1l (4 cups) water
1 bay leaf
2 dried chillies, chopped
Salt and freshly-ground black pepper, to taste
Vegetable oil

Method:

Combine the flours and salt in a bowl. Whisk to mix then, adding a little water at a tine, beat until you have a smooth batter (you will need about 200ml [4/5 cup] water). Set aside to rest for at least 30 minutes.

Heat oil in a large, deep frying pan or skillet. Add the lamb pieces and cook until browned all over, stirring occasionally. Add the chopped vegetables, mixing to combine, then pour in the 1l water. Bring everything to a boil, reduce to a simmer, then add the bay leaf and dried chillies. Cover and cook for 60 minutes, until the ingredients are tender.

Place a shallow frying pan or skillet over high heat. Once hot spread over a little oil or butter then add a ladleful of the pancake batter. Spread or tilt a pan to form a smooth pancake. Cook on both sides, flipping once, until nicely coloured and cooked through.

Transfer to an oven to keep warm as you cook the remaining batter.

Arrange the pancakes on a warmed serving platter. Spoon over the lamb stew and serve.
