This is a re-creation of a pizza I used to buy quite frequently from a Lebanese take away in West London many years ago. Like many Lebanese pizzas it was topped simply with a zaatar-spiced tomato-based sauce, chopped lamb, toasted pine nuts and a smattering of black olives. Here is my re-creation of the dish.
Add a little olive oil to a pan and use to fry the lamb until browned on all sides. Season the meat with a little salt and black pepper then set aside to cool.
Prepare the Mankoushe (Lebanese pizza dough) as in the recipe then spread the Lebanese pizza sauce over the top, covering the dough almost to the edge. Scatter the fried lamb over the top, followed by the pine nuts and the black olives.
Place the pizza in an oven pre-heated to 200°C and bake for about 10 to 15 minutes, or until the dough is cooked and crispy around the edge. Cut into wedges and serve.
