This is a classic tomato-based pizza sauce flavoured with the classic Lebanese spice mix, Zaatar that's commonly employed by Lebanese restaurants.
Ingredients:
1 onion, finely chopped
3 garlic cloves, minced
100ml olive oil
50g Zaatar spice blend
5 large, ripe, tomatoes, chopped
sea salt and freshly-ground black pepper
Method:
Add a little of the olive oil to a pan and use to fry the onion and garlic until soft (about 6 minutes) then add the tomatoes and cook for a further 5 minutes, or until they begin to break down.
Stir-in the olive oil and the zaatar spice blend and season with salt and black pepper. Continue cooking for about 2 minutes, or until all the ingredients blend together then take off the heat.
