Kreatossoupa (Meat Soup) is a traditional Greek recipe for a classic veal soup with celery, carrots, onions and parsley in a passata stock with rice. The full recipe is presented here and I hope you enjoy this classic Greek version of: Meat Soup (Kreatossoupa).

Ingredients:
1kg veal
1 onion, chopped
3 celery sticks
2 carrots, peeled
4 parsley stalks, chopped
1 bay leaf
120ml passata (tomato juice)
150g rice
salt and freshly-ground black pepper, to taste
juice of 1 lemon
Method:
Place the meat in a large pot, cover with water and bring to a boil. Skim off any foam that rises the the surface of the pan with a spoon then add the vegetables and tomato juice and season with salt and black pepper. Reduce to a simmer and cook for about 50 minutes, or until the meat is tender.
Remove the meat and whole vegetables from the pot at this time. Chop them and set aside. Meanwhile, add the rice to the stock and cook for about 15 minutes, or until tender. Return the meat and vegetables to the pot, allow to heat through then season with lemon juice and serve ladled into soup bowls.
