Kpakpo Shito (Fresh Shitor)

Kpakpo Shito (Fresh Shitor) is a traditional Ghanaian recipe for a classic freshly-made salsa of tomatoes, onion and lots of hot chillies that's served ubiquitously with Ghanaian food. Ingredients:

12 hot red chillies (eg Scotch Bonnet)
2 large ripe tomatoes, chopped
1 onion, coarsely chopped
1 tsp salt
1 tsp black pepper

Method:

Add all the ingredients to a pestle and mortar (or a food processor) and pound to a rough paste. Allow to stand for half an hour then use either as a marinade or as a salsa.

A very similar salsa/marinade is also made in Liberia but usually includes the addition of 1 or 2 Maggi cubes.
