Kilishi (Dried Sliced Beef) is a traditional Nigerian recipe for a classic dish of wafer-thin slices of beef that are seasoned and sun-dried for later use as a snack or as a flavouring for soups. Ingredients:
500g top rump of beef, cut into wafer-thin slices
1 tsp ground chilli
1 tsp ground peanuts
1 tbsp groundnut oil
salt, to taste
Method:
Season the meat slices with the ground chilli and ground peanut. Place in a bowl then mix in the oil and the salt. Arrange in a single layer on baking trays or baking dishes then cover with a wire rack and leave in the hot sun for two or three days, or until completely dry.
Alternatively, the pieces of meat can be dried over night in a low oven. Store until needed and serve either as a snack, or use as a flavouring ingredient in soups and stews.
