Kamuna is a traditional Sierra Leonian recipe for a classic stew of beef, dried fish, broad beans and sweet potato leaves in an okra, chilli and palm oil base flavoured with Maggi cubes. The full recipe is presented here and I hope you enjoy this classic Sierra Leonian version of: Kamuna.

Ingredients:
3 large bunches of sweet potato leaves, leaves picked and very finely shredded
1kg beef, cut into serving pieces
1 medium dried, smoked, fish, washed and flaked
200g broad (fava) beans parboiled for 5 minutes
2 cakes (about 4 tbsp) ogiri (iru) (fermented locust beans), ground
9 tbsp red palm oil
1 large onion, sliced
5 medium chillies
5 fingers of okra, finely shredded
1 Maggi cube (or meat stock cube)
2l water
salt, to taste
Method:
Season the meat with a few slices of onion, the Maggi cube and a little salt. Toss to mix, place in a pot and steam in its own juices until the liquid has dried up.
Add the water to a pot along with the smoked fish, ogiri and palm oil. Slowly bring to a boil, stirring all the while, then cook for about 12 minutes.
Add the shredded sweet potato leaves then stir in any remaining onion. Reduce to a simmer and cook for about 5 minutes. Adjust the seasoning to taste and simmer for 5 minutes further.
