Jerk Kebabs

Ingredients:

450g lean beef, pork, goat, chicken or lamb, cubed
60ml Jerk Marinade
2 tbsp cooking oil
115g button mushrooms
1 onion, quartered
2 oranges, cut into wedges

Method:

Whisk together the oil and marinade in a bowl. Add the meat mixture and marinade for at least 4 hours (best over night). When done, thread the meat cubes onto kebab skewers, alternating with the mushrooms, orange wedges and onion (if using bamboo skewers, soak in water beforehand).

Place on a hot barbecue, turning and basting with left-over marinade until the meat is cooked through. Serve on a bed of rice, accompanied by a green salad.
