Kecap Manis (also known as Ketjap Manis) is a traditional Indonesian recipe for a classic thick, sweet, soy sauce which is made from a blend of soy sauce and treacle (molasses) and flavoured with star anise. Kecap Manis (Ketjap Manis) is a classic sweet, thick, soy sauce that is a staple of Indonesian cooking. It can be hard to buy commercially, bit it's really easy to make your own.
Ingredients:
60ml soy sauce
60ml black treacle (molasses)
1 star anise (optional)
Method:
Combine the soy sauce, treacle and star anise in a small pan. Heat gently until the molasses is liquid then stir to combine. Continue cooking for 2 minutes then take off the heat.
Remove the star anise and allow to cool slightly before bottling and storing. You can make as large a batch of this sauce as you need.
