Ibiharage II (Fried Beans II)

This dish is common to both Rwanda and Burundi, though here the Burundian version is given.

Ingredients:

2 tbsp vegetable oil
3 onions, finely chopped
2 garlic cloves, minced
450g cooked white beans (home-made or tinned, washed and drained)
salt and freshly-ground black pepper
hot chilli powder

Method:

Heat the oil in a large, deep-sided frying pan over medium-high heat. Add the onion and garlic and fry until the onions are soft (about 4 minutes).

Add the beans then season to taste with salt, black pepper and chilli powder. Stir to mix then reduce the heat to a simmer and cook for about 10 minutes further, or until the contents of the pan are heated through. Serve hot as an accompaniment.
