Hot Sesame Beef a Classic Chinese recipe for a stir-fry dish of marinated beef strips with vegetables and sesame seeds in a chilli-flavoured beef stock, ginger and garlic base.

Ingredients:

500g beef fillet, sliced into thin strips
1 1/2 tbsp sesame seeds
125ml beef stock
2 tbsp soy sauce
2 tbsp fresh ginger, grated
2 garlic cloves, finely chopped
1 tsp cornflour (cornstarch)
1/2 tsp chilli flakes
3 tbsp sesame oil
1 large head of broccoli, cut into florets
1 orange bell pepper, sliced thinly
1 red chilli, de-seeded and finely sliced
1 tbsp chilli oil (or to taste)
1 tbsp fresh coriander (cilantro), chopped (to garnish)

Method:

Combine the beef strips in a small bowl with 1 tbsp of the sesame seeds. In a separate bowl whisk together the beef stock, soy sauce, ginger, garlic, cornflour and chilli flakes.

Heat 1 tbsp of the sesame oil in a wok. Add the beef strips and stir-fry for 3 minutes then remove from the wok and set aside.

Discard any oil left in the wok then wipe clean with kitchen paper. Add the remaining oil to the wok and when hot use to stir-fry the broccoli, bell pepper, chilli and chilli oil for about 3 minutes. Stir in the beef stock mixture, cover and simmer for 2 minutes.

Return the beef to the wok and continue simmering, stirring occasionally, until the sauce thickens. Cook for 1 minute more.

To serve, turn the beef mixture into a warmed dish. Sprinkle over the sesame seeds and serve garnished with chopped coriander.
