Hoontoo (Sierra Leonean Steamed Beef and Polenta Dumplings)

This is a dish of minced beef and polenta with onion, chillies, garlic and ginger that are shaped into balls and steamed to cook.
Ingredients:
500g beef mince
180g polenta
1 tsp cayenne pepper
1 large brown onion
6 cloves garlic
3-4cm piece of ginger
1 jumbo cube or 2 small royco cubes
4 spring onions
1 green chilli, chopped
1 red chilli, chopped
120ml (1/2 cup) water
salt to taste
Method:
Blend half of the onion together with the ginger and garlic to form a paste. In a large mixing bowl, add the onion mixture to the mince, polenta, cayenne pepper and stock cubes. Cut the remaining half onion into wedges and set aside.
Use your hands to mix the ingredients together, adding the water a little at a time then shape into balls.
Arrange the resultant dumplings in a large steamer basket, top with the chopped red and green chillies, spring onions and onion wedges. Cover and steam for 20 minutes.
