Guyanese Pepper Pot is a traditional Guyanese recipe for a classic hot chilli stew of mixed meats. The full recipe is presented here and I hope you enjoy this classic Guyanese version of: Guyanese Pepper Pot.

This is a classic Guyanese stew that must count as one of the country's national dishes. It's also very similar in many ways to West African 'pepper soups'.
Ingredients:
2 cow's feet
450g oxtail
450g beef, cubed
450g pork, cubed
450g salted pig's tail (pre-boiled to reduce the salt content)
450g beef shin (with bone)
5 garlic cloves, crushed
1 tsp Mexican thyme (Coleus amboinicus) or oregano, chopped
1 tsp thyme (typically broad-leaf thyme), chopped
leaves from 1 sprig of basil, shredded
5 hot chillies (Scotch Bonnet or Habanero)
180ml Cassareep
1 small piece of ginger, chopped and pounded
1 tbsp brown sugar
3 cloves
salt and freshly-ground black pepper, to taste
1 large onion, chopped
oil for frying
Method:
Thoroughly wash the cow's feet then dry and combine with the oxtail, beef, pork and beef shin in a large bowl (do not add the pig tail) then season with salt, black pepper, thyme, Mexican thyme, garlic, onion, ginger, brown sugar, cloves and basil. Cover and set aside to marinate for at least 30 minutes.
Add about 4 tbsp oil to a large iron pot or casserole and when hot turn in the meat. Cook, stirring with a heavy spoon, until the meat has browned. In the meantime, chop the pig's tail then boil in water for 8 minutes, drain and rinse under cold water then add to the other meats. Cook for 5 more minutes then add the cassareep. Bring to a simmer and cook for 5 minutes then add enough water to just cover the meats.
Bring to a boil, reduce to a simmer, cover and cook for about 5 1/2 hours, or until the meat is tender and falling off the bone. After about 4 1/2 hours float the hot peppers on top of the stew (I like mine hot, reduce the number to your own taste). If you burst the chillies then the stew will be even hotter.
Traditionally, this meat stew is served with mixed, boiled, root vegetables (yams, cassava, sweet potatoes, potatoes, eddoes, carrots).
