Green Bean Bredie

Ingredients:

200g thinly-sliced onions
60g butter
900g stewing lamb cut into 3cm cubes
500ml water
2 tsp salt
1/4 tsp black pepper
2 chillies, cut into small pieces
2 tbsp sugar
600g string beans cut into 5cm slivers
450g potatoes, peeled and cut into 1.5cm slices
salt, pepper and paprika to season

Method:

Melt the butter in a large casserole dish, add the onion and lamb. Cook until the lamb is browned on all sides. Add the water along with the salt, pepper, chillies and sugar. Cover and simmer for 30 minutes then add the green beans over the meat, followed by the potatoes. Sprinkle with the salt, pepper and paprika then cover tightly and simmer until the vegetables are done (about 35 minutes).

Serve as a stew in a large bowl, accompanied by rice.
