Golbeda Achar (Nepali Tomato Achar) is a traditional Nepalese recipe for a classic sauce of tomatoes with chillies, garlic and coriander in a lemon juice base with sichuan pepper and sesame seed powder. Ingredients:
2 tomatoes
10g coriander, chopped
1 garlic clove
3 green chillies
salt, to taste
½ tbsp lemon juice
¼ tsp sichuan pepper
½ tbsp sesame seed powder
Method:
Cut a cross in the top and base of the tomatoes. Combine the tomatoes with 500ml water in a small pan. Bring to a boil over medium-high heat. Once the tomato is cooked (when the outer skin starts to come off).
Drain the tomatoes and set aside until they can be handled. Peel off and discard the skin then place the tomatoes in a blender.
Combine all spices, seasonings, green chili, garlic, and coriander in the blender with the tomatoes then render to a fine paste.
Pour the resultant tomato sauce into a bowl.
The dish is ready for serving and makes a great accompaniment when served with rice, roti or gundruk.
