Also known as 'Tomato Stew'. this classic tomato and hot chilli sauce is a Ghanaian staple. It can be made into a meal by serving over a bed of rice or it can be served as an accompaniment to a fish-based dish.

Ingredients:

2 medium onions, diced
8 ripe tomatoes, chopped
120ml vegetable oil
1 tsp hot chilli, pounded to a paste
1 tsp seasoning salt
1/2 tsp dried thyme, crushed
1 green bell pepper, diced (optional)

Method:

Heat the oil in a frying pan, add the onions and cook for about 4 minutes, or until soft and translucent but not coloured. Add the tomatoes, chilli, seasoning salt and thyme along with the green bell pepper (if using).

Bring the mixture to a simmer and cook for about 30 minutes, or until the tomatoes have broken down and the mixture is a deep red in colour. Serve hot over a bed of rice.
