This is a spicy South African take on scrambled eggs that is typically served as a breakfast dish and is often used as a filling for bread cups.
Ingredients
1 tbsp sunflower oil
1 onion, sliced into thin rings
1 small green bell pepper, de-seeded and finely chopped
1 green chilli, finely chopped
6 eggs, well beaten
2 tsp fish masala
1 tbsp milk
1 tsp sea salt or garlic salt
4 bread cups
Method:
Heat the oil in a frying pan and use to fry the onions for about 8 minutes, or until golden brown in colour. Add the green bell pepper and the chilli and fry for 5 minutes more.
Whisk together the eggs, milk, salt and curry powder in a bowl. Add to the frying pan and cook, beating constantly with a fork, until you have the texture of scrambled eggs.
Serve hot either on buttered toast, or use as a filling for bread cups.
