This Cape Malay recipe is an excellent way of using-up stale bread. They're baked in muffin wells to form cup shapes. These can be filled with scrambled eggs for breakfast, or a range of savoury fillings as snacks.
Ingredients:
12 slices of white or brown bread, crusts removed
60ml melted butter
Method:
Brush the bread liberally on one side with the melted butter. Use these buttered breads to line the wells of a liberally-greased muffin or deep patty tin (work the bread into the wells so that they are lined and you have a cup shape). Take care when you line the wells that the bread does not tear.
Trim off any excess then transfer to an oven pre-heated to 200°C and bake for about 10 minutes, or until the bread is crisp.
Remove from the oven and serve hot. Typically these are filled with scrambled eggs for breakfast and with eggs and shrimps, Smoored meats or Gesmoorde eier to be served as snacks.
