Fante-fante, also known as Fisherman's stew is a classic coastal recipe from Ghana for a fish stew cooked in a ginger, hot chilli, tomato and red oil gravy.
Ingredients:
1kg fish, cut into 6 steaks
4 large, ripe, tomatoes
1 red onions
2 habanero chillies
red palm oil
1 thumb-sized piece of fresh ginger, finely chopped
salt
2 Maggi cubes, crumbled
1/4 white cabbage
Method:
Chop the tomatoes and 1/2 onion and combine in a blender with 1 habanero chilli. Process to a smooth paste.
Put the fish into the base of a cast-iron casserole (Dutch oven). Add the ginger, 1 tsp salt and 1 crumbled Maggi cube and the 1/4 onion, finely chopped. Cover the pot and cook the fish in its own juices 1 minute, before pouring over the blended tomato mix.
Shake the pot to combine everything, bring to a brisk simmer, partly cover the pot and cook for 5 minutes. At this point season with a little more salt and add in the remaining Maggi cube and the remaining habanero chilli.
In a deep frying pan, heat 250ml (1 cup) red oil. Once hot, add the remaining 1/4 onion, sliced into strips. Fry for 3 minutes then tip the contents of the pan into the fish stew. Stir everything gently together, being careful not to break the fish pieces.
Cook for a couple more minutes, until the red oil is incorporated and the fish is tender.
Transfer the fish to a serving dish, ladle over some of the sauce. Serve with semolina, banku, fufu or rice.
