Esfiha (Savory Stuffed Pastries) a Classic Brazilian recipe for a snack of yeasted pastry filled with either a beef or cheese savoury filling that are oven baked to cook.
Ingredients:
For the Dough:
625ml milk, at room temperature
70g live yeast
120ml oil
1 tbsp sea salt
2 1/2 dessert spoons sugar
1kg plain flour
For the Meat Filling:
1kg minced (ground) beef
500g salad tomatoes, finely diced
500g onions, finely chopped
2 dessert spoons tahini (sesame seed paste)
250ml fresh lemon juice
1 dessert spoon
dukkah spice mix
salt, to taste
For the Cheese Filling:
1kg fresh white cheese, grated
1/2 bunch fresh parsley, chopped
Method:
In a bowl, combine the milk, yeast, oil, salt and sugar. Sift over the flour then use your hands to bring the ingredients together. Knead well, until the dough is smooth and elastic.
Sprinkle flour over your work surface and turn out the dough. Roll the dough out with a floured rolling pin then cut into rounds with a large round pastry cutter, or using the rim of a bowl as a template.
In the meantime, combine the ingredients for the meat filling in one bowl and the cheese filling in another bowl. Place a spoonful of the meat or cheese mix in the centre of a round of the pastry. Fold the dough over to form a half moon or a triangle. Alternatively, bring the four points of the pastry together in the centre to form a flower. Crimp the edges sealed.
Arrange the filled pastries on a grease baking tray and set aside in a warm place to rest and rise for 10 minutes.
After this time transfer to an oven pre-heated to 220°C and bake for 10 minutes, or until puffed up and golden brown.
Serve warm.
