Dukkah

Dukkah is a traditional Egyptian spice mixture that can be served as a dip or can be used to flavour meats, rice and vegetables before serving.

Method:

Pre-heat your oven to 180°C (350°F/Gas Mark 4) then place the sesame seeds on a baking sheet and toast in the oven for about 2 minutes a side. Remove from the oven, replace with the hazelnuts and chickpeas and roast for 3 minutes a side.

Meanwhile add the coriander, cumin and black peppercorns to a dry frying pan and toast for about three minutes on low heat. Allow the ingredients to cool, transfer to a coffee grinder and grind to a fine powder. Store in a clean, airtight jar.

One traditional way to use this spice is to serve along with a bowl of olive oil and hunks of Breads. Dip the bread in the olive oil and then the Dukkah and eat. The mixture can also be used to sprinkle on poached eggs or over pasta.
