Damaa is a traditional Sudanese recipe for a classic stew of lamb in a lightly-spiced tomato base with coriander. The full recipe is presented here and I hope you enjoy this classic Sudanese version of: Damaa.

This is a Sudanese dish of lamb pieces in a sauce made with onions, garlic, tomato purée and spices.
Ingredients:
1 ½ onions, coarsely chopped
2 finger chillies, finely chopped
3 tbsp of vegetable oil
1 bell pepper, diced
500g lamb, cubed
3 garlic cloves, finely chopped
1 tbsp ground cumin
1 tbsp of ground coriander
1 ½ tbsp of tomato purée
1 tbsp of fresh coriander (cilantro), chopped
Salt and freshly-ground black pepper, to taste
Method:
Heat the oil in a pan, over medium heat, add the onions and stir to coat in the oil. Cook for 4 minutes, until the onion is soft and translucent then stir in the bell pepper and chillies. Cook for 2 minutes more.
At this point add the lamb, cover the pan and let the lamb steam in its own juices for 30 minutes, by which time the lamb should be tender and cooked through.
Stir in the garlic, tomato purée, cumin and coriander. Season to taste with salt, re-cover the pan and continue cooking for 10 minutes more.
