Crockpot Chili

Ingredients:

900g minced beef
1 large onion, chopped
1 large green bell pepper, de-seeded and chopped
1 large jalapeño chilli, chopped
chilli powder, to taste
garlic salt, to taste
salt and black pepper, to taste
sugar, to taste
generous pinch of cumin
800g chopped tomatoes, with juice
180g tomato purée
350g cooked red kidney beans (tinned is fine)
800g hot pinto bean chili

Method:

Brown the beef in a frying pan. Transfer the meat to a bowl and use the remaining fat to cook the onion and green bell pepper for about 6 minutes, or until the onion is soft. Combine the onion mix with the beef then add the spices and stir to combine. Cover and allow to marinate for 1 hour.

Transfer to a crockpot then stir-in the tomatoes, tomato purée, kidney beans and chilli beans. Cook for 8 to 10 hours on low. The flavours improve if you refrigerate the mixture and re-heat the following day.
