Crockpot Beef Chili

Ingredients:

1.4kg lean beef, cubed
120g onions, chopped
3 garlic cloves, chopped
1 tsp salt
3 tbsp jalapeño chillies, chopped
2 tbsp chilli powder (New Mexico chilli is traditional)
2 tsp ground cumin
250ml dark beer (but not stout)
60ml beef stock
2 tbsp Masa Harina blended with 2 tbsp water (Masa Harina is dried and ground cornmeal dough, used in making Tortillas, substitute conrnflour [cornstarch] if not available)

Method:

Add a little oil to a large frying pan and use to brown the beef, onion and garlic. When nicely coloured drain off any excess fat and continue cooking for 1 minute more. Transfer the beef mix to the base of a slow cooker (crockpot) and add the salt, chillies, chilli powder, cumin, beer and stock.

Stir to combine then cover and cook on low for between 8 and 10 hours. Whisk together the masa harina (or cornflour) with the water into a slurry and add to the chili about 45 minutes before it's done. Turn to high and cook, uncovered, for the remaining 45 minutes (add a little more stock or water if necessary). Serve on a bed of rice.
