Coconut Bean Rice

This is a really interesting recipe... whilst not truly native this seems to be a Caribbean recipe that's made its way back to Nigeria. Of course, being Nigerian now, it's pepped up with the addition of Scotch bonnet chillies... food wouldn't really be food without the addition of hot chillies. It also incorporates chilli powder, which sould be one of the West African blands heavily based on turmeric (Madras curry powder would work at a pinch).
Ingredients:
1 large onion, chopped
1 medium bell pepper, chopped
1 tsp
curry powder
1 tsp salt
1 tsp
cayenne pepper
3 tbsp olive oil
6 plum tomatoes, chopped
2 scotch bonnet
chillies, pounded to paste
500g kidney beans
440ml
coconut milk
700ml water
200g cooked rice
Method:
If using dried kidney beans pour into a large bowl and generously cover with water. Allow to soak over night. The next day discard the soaking water, and add the beans to fresh boiling water. Boil for 30 minutes then discard the water. Bring a fresh pan of water to the boil and boil the beans for a further 40 minutes in this. Again, discard the water and retain the beans (the beans should be soft by this point).
Fry the onions, bell pepper, curry powder, salt and chillies in oil for 5 minutes. Add the tomatoes and simmer for a further 10 minutes. Add the beans, coconut milk and water. Simmer for 5 minutes then add the rice, stir well and serve.
