Ingredients:
1 coconut, shell removed and flesh grated
360ml hot (simmered but not boiled) water
Method:
Place the coconut in a heat-proof bowl and add the water. Cover and allow to cool naturally to room temperature. Line a large strainer with cheesecloth or muslin. Pour the coconut and water mixture through this. Lift the muslin up and fold the edges together. Twist to squeeze out all the liquid. Refrigerate the coconut milk.
You can air-dry the remaining coconut flesh for other uses.
