Caribbean Cook-up is a traditional Jamaican recipe for a classic one-pot dish of minced meat, vegetables, pineapple and rice with jerk seasonings thats typically served with an avocado salad. The full recipe is presented here and I hope you enjoy this classic Indian version of: Caribbean Cook-up.

Ingredients:
225g minced beef, lamb or pork
1 medium onion, chopped
1 garlic clove, crushed
2 celery sticks, chopped
1 green bell pepper, de-seeded and chopped
225g tinned pineapple chunks, drained
1 tbsp Jerk Bar-B-Q Sauce
2 tsp Jerk seasoning (dry spice blend)
100g long-grain rice, well washed
300ml stock
salt and freshly-ground black pepper, to taste
2 spring onions, finely chopped, to garnish
Method:
Add the mince, onion, garlic, celery and bell pepper to a pan and dry fry for about 8 minutes, or until browned. Add the barbecue sauce and the jerk seasoning and cook, stirring frequently, for a further 2 minutes.
Now add all the remaining ingredients and bring to a boil. Reduce to a simmer, cover the pan and cook for 20 minutes, stirring occasionally. Add the spring onions and serve immediately, accompanied by an avocado salad.
