Calabrese Mushroom Chili

This is a classic chili in the 'Calabrese' or 'Calabrian' style, which means its made with cannelloni beans, minced beef and tomatoes with mushrooms.

Ingredients:

450g minced beef
2 garlic cloves, minced
1 onion, chopped
2 red bell peppers, chopped
120m olive oil
450g wild mushrooms (any firm kind), sliced
150g tomatoes, crushed
1 tsp salt
1 tsp freshly-ground black pepper
1 tbsp red wine vinegar
2 tbsp chilli powder (or to taste)
440g cooked cannelloni beans (1 tin)
fresh Italian Breads, to serve

Method:

Heat the oil in a pan and use to fry the meat, onions and peppers for about 5 minutes, or until the meat is lightly browned. Add the mushrooms, cover the pan and cook over medium heat for about 5 minutes.

Now stir-in the tomatoes, salt, black pepper, vinegar and chilli powder. Cover the can and continue cooking or 10 minutes then stir-in the beans. Cover and cook for 10 minutes further. Ladle into bowls and serve with generous chunks of bread.
