Toast the spices in a dry frying pan for a few minutes, stirring constantly to ensure they do not burn. Transfer to a coffee grinder (or a pestle and mortar) and grind to a fine powder and store in an air-tight container. This powder is generally used with fish at a ratio of 2 tsp powder to each 400g of fish.
