Best Ever Barbecued Tex-Mex Burgers is a modern Fusion recipe for a classic barbecue dish of beef, onion and chilli burgers served in sesame seed baps with tomatoes, onion and lettuce. Ingredients:
900g lean, minced (ground) beef steak
2 onions, finely chopped
25g white breadcrumbs
2 jalapeño chillies, finely chopped
1 egg, lightly beaten
1 1/2 tsp fresh thyme, finely chopped
salt and freshly-ground black pepper, to taste
To Serve:
6 sesame seed baps
2 tomatoes, sliced
1 onion, cut into thin rings
lettuce leaves guacamole
Method:
Combine the minced steak, onions, breadcrumbs, chillies, egg and thyme in a large bowl. Season to taste with salt and black pepper then mix thoroughly with your hands.
Form the mixture into six large patties using your hands, then neaten the edges with a round-bladed knife.
Place the burgers on the oiled rack of a barbecue over hot coals and cook for between 3 and 4 minutes per side, or until cooked to your liking.
Near the end of the cooking time, cut the baps in half and briefly toast on the barbecue, cut side down.
Fill the toasted baps with the cooked burgers, lettuce, tomato slices and onion rings. Top with the guacamole and serve immediately.
