Beef Toppers: Classic British recipe for a barbecue dish of home-made beef and burgers served in a toasted bap with either a savoury mushroom, guacamole or barbecue sauce topping.

Ingredients:

700g lean minced beef
1 onion, finely chopped
2 tbsp Worcestershire sauce
salt and freshly-ground black pepper, to taste
toasted sesame baps, to serve

For the Savoury Mushrooms:
125g button mushrooms, sliced
1 tbsp soy sauce
1 tbsp Worcestershire sauce

For the Guacamole:
1 avocado
1 garlic clove
1 tbsp lemon juice
1 tbsp tomato relish
1 red jalapeño chilli, finely chopped (or to taste)

For the Barbecue Sauce:
3 tbsp brown fruity sauce
3 tbsp tomato ketchup
1 tsp wholegrain mustard
1 tbsp clear honey


Method:

For the savoury mushrooms, mix together the ingredients in a non-reactive bowl, then set aside to marinate for at least 30 minutes.

For the guacamole, peel, stone and mash the avocado them mix in the garlic, chilli, lemon juice and tomato relish. Cover and set aside in the refrigerator until needed.

For the barbecue sauce, combine all the ingredients together in a bowl. Beat to mix, then cover and set aside to chill in the refrigerator until needed.

For the burgers, mix together the beef, onion, Worcestershire sauce and seasonings in a bowl. Mix until well combined, then divide into six equal portions and pat each into a round about 1cm thick. Set aside to chill in the refrigerator for 30 minutes.

Place the burgers on the oiled rack of a barbecue set over hot coals and cook for between 5 and 10 minutes per side (depending on how you like your burgers cooked).

Serve the burgers in a toasted bap with your choice of topping spooned on top.
