Ingredients:
3 tbsp butter
450g sirloin cut into 3cm cubes
2 onions, chopped
580ml beef stock
3 large potatoes, peeled and sliced
salt to taste
1 tbsp South African Curry Powder
2 bay leaves
1 tbsp vinegar
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp paprika
1/2 tsp soy sauce
Method:
Melt the butter in a large pan and brown the beef and onions. Add the stock, salt, curry powder, bay leaves, spices and soy sauce. Bring to the boil then lower to a simmer and cook for 45 minutes. Add the potatoes and vinegar and cook until the potatoes are tender (about 20 minutes). Remove the bay leaves and serve.
This soup is actually better if refrigerated over night and warmed-up to serve the following day.
