Barbecue Steaks with Red Onion Marmalade Classic British recipe for mustard-crusted beef steaks cooked on a barbecue and served with red onion marmalade.

Ingredients:

4 rump steaks
2 tbsp wholegrain mustard
2 tbsp sunflower oil
finely-grated zest of 1/2 orange
juice of 1/2 orange
salt and freshly-ground black pepper, to taste

red onion marmalade to accompany
boiled new potatoes, to accompany

Method:

Make a few cuts in the fat along the edge of each steak (this prevents the meat from curling during cooking). Spread the steaks with a little of the mustard and season liberally with salt and black pepper.

Mix together the oil, orange zest and orange juice in a small bowl (use this mixture to baste the steaks during cooking).

Barbecue the steaks over hot coals, ensuring that you sear the meat over the hottest part of the barbecue for 2 minutes per side. Now move the steaks to an area with less intense heat and cook, basting occasionally with the orange mixture for between 4 and 10 minutes per side (depending on how well cooked you like your meat).

Serve hot, accompanied by the new potatoes and the orange marmalade.
