Red Onion Marmalade: Classic British recipe for an accompaniment of onions cooked in red wine and sugar until reduced and caramelized.

Ingredients:

2 medium red onions, cut into 5mm dice
500ml light, fruity, red wine
250ml orange juicee
2 tbsp brown sugar

Method:

Combine all the ingredients in a saucepan. Bring to a boil, reduce to a simmer, cover and cook gently, stirring occasionally, for about 30 minutes, or until the ingredients are reduced down to a thick marmalade-like paste.

Take off the heat and set aside to cool.
