Banani Loko (Aloko with Chilli Sauce)

Banani Loko (Aloko with Chilli Sauce) is a traditional Guinean recipe (from Guinea-Conakry) for a classic snack of deep fried plantain slices served topped with a chilli, tomato and onion sauce. This is a classic Guinean snack dish, enjoyed by young and old. Children eat this as snack in school playgrounds and adults eat them during break times.

Ingredients:

6 plantains
3 tomatoes, very finely chopped
2 large onions
1 small red chilli, very finely chopped
oil for frying
1 Maggi cube
a few basil leaves
1 large sprig of thyme
salt and freshly-ground black pepper, to taste

Method:

Peel the onions then shred into thin strips. Heat about 3 tbsp oil in a large pan over medium-high heat. Add the onions and fry for about 5 minutes or until lightly browned then add the tomatoes and the chillies.

Fry for 1 minute then add the basil and crumble in the bouillon cube. Season to taste then bring to a simmer and cook for 10 minutes, until the tomatoes have broken down. Reduce the heat to a gentle simmer and cook for about 8 minutes more, stirring frequently.

In the meantime, prepare the plantains. Peel the plantains then cut into generous slices. Heat oil in a deep fryer, add the plantains in batches and fry until a deep golden brown. Remove from the fryer, drain on kitchen paper and cook the next batch.

Serve the plantain slices on a warm platter and garnish with the hot sauce. Alternatively, you can serve the sauce separately in a bowl so your guests can dip the fried plantain slices into it.
