Baamiye Suqaar (Meat and Okra Stew)

Ingredients:

450g beef (or lamb), cubed
2 potatoes, peeled and diced
225g okra, sliced thinly
2 garlic cloves, crushed
1 squash, peeled and diced
1 tomato, chopped
1 chicken stock cube
1 onion, chopped
1 spring onion, chopped
2 tbsp coriander leaves, chopped
1 tsp ground coriander seeds
1 tsp ground cumin
sea salt, to taste
2 tbsp oil

Method:

Add the oil to a large frying pan or skillet over medium heat and use to brown the meat all over. Once the meat is nicely coloured add the onion and cook until tender then stir in the potato and cook for 5 minutes.

Season with the salt and spices then add the tomato, garlic, coriander leaves and the squash. In the meantime, whisk the chicken stock cube with a little boiling water until dissolved then stir into the stew.

Now add the okra and spring onions. Bring to a simmer and continue cooking gently for about 30 minutes, or until the meat and the vegetables are tender. Serve hot with sabaayad.
