African Hot Sauce is a traditional sub-Saharan African recipe for a classic hot chilli sauce flavoured with bell peppers and thickened with tomatoes, versions of which are common to the entirety of sub-Saharan Africa. Ingredients:
12 hot chilli peppers (Scotch Bonnet preferably)
1 small green bell pepper, de-seeded
1 garlic clove
1 medium onion, roughly copped
2 small tins tomato paste
4 tbsp vinegar
1 tsp sugar
1 tsp salt
Method:
Chop the chillies roughly then grind together with the green bell pepper, garlic and onion. Add all the ingredients to a saucepan and simmer for 90 minutes. Place in jars and refrigerate.
