Adobo Valentine Lamb is a modern American recipe for a classic dish of lamb Valentine steaks marinated in lime juice and adobo sauce that are fried in a griddle pan until cooked and which makes an excellent dish for Valentine's day. Ingredients:
2 (about 240g) lamb Valentine steaks (or loin chops)
3 tbsp pureed chipotle chillies in adobo sauce
juice of 1 lime
1 garlic clove, minced
1 tsp dried oregano
1 tsp ground cumin
salt and black pepper to taste
Method:
Mix together all the ingredients (except the lamb) in a small bowl. Season the meat, place in a shallow dish and pour the lime and adobo sauce over the top. Turn the steaks a few times to ensure an even coating then cover the bowl and allow to marinate in the refrigerator for at least 2 hours.
Pre-heat a lightly-oiled griddle pan until hot then add the lamb valentine steaks and fry for about 5 minutes per side (or more depending on your desired level of doneness). Allow to rest for 2 minutes then serve. If cut into strips the meat also makes an excellent filling for fajitas.
