These recipes, all contain as a major flavouring.

Voatsiperifery Pepper, represents the fruit of Piper borbonense, a species closely related to black pepper that is native to Madagascar. It is a wild pepper vine that grows up to 20m in height and is a parasite other plants, which it also requires for support.

The name, Voatsiperifery derives from from voa, the Malagasy word for fruit, and tsiperifery, the local name of the plant. The taste of this pepper is woody and earthy, with a medium heat. However, it also has distinctive light (flowery) and zesty flavours that makes it unique and distinguishes it from black pepper.

It is only harvested in the wild from wild vines, a dangerous procedure. As a result this is a rare and expensive spice that currently retails for around €10 per 100g.
