Vryonoye Miaso Po-Russki (Boiled Beef Russian Style) is a traditional Russian recipe for a classic stew of beef with vegetables in a stock made with beef bones. Ingredients:
450g beef marrow bones
2l water
1 onion, cut into 1cm dice
1 carrot, sliced
2 celery sticks, with leaves, sliced
1 turnip, peeled and cut into 1cm dice
8 whole black peppercorns
2 bay leaves
4 tbsp fresh parsley, chopped
4 tbsp fresh dill, chopped
1.4kg boneless beef rump roast
1½ tsp salt
2 garlic cloves, chopped
Method:
Combine the black peppercorns, bayleaves, parsley and dill in a small cloth bag and tie securely. Add to a large pot along with the water, marrow bones, vegetables and salt then bring to a boil over high heat. Skim the foam from the surface as it rises and continue boiling for 10 minutes. Add the beef roast and boil for 3 more minutes before reducing the heat to low, covering the pan and simmering for 220 minutes.
Skim the surface occasionally as the meat cooks. When done, remove from the pan form the heat, take the roast from the pot then slice and serve with the vegetables and liquid.
