Ukpo is a traditional Nigerian recipe for a classic starter of steamed plantains, flour and chillies cooked in banana leaves. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Ukpo.

Ukpo is a traditional dish from eastern Nigeria that's made with over-ripe plantain and served with a fried pepper sauce. This recipe is also very similar to a Liberian recipe that my wife has demonstrated for me.
Ingredients:
1kg over-ripe plantain
150g plantain flour
2 medium-fresh chillies (pounded to a paste)
1 small onion (sliced and pounded to a paste)
4 tbsp red palm oil
salt to taste
8 washed banana leaves or aluminium foil for wrapping
Method:
Mash the plantain in a bowl then stir-in the plantain flour and the remaining ingredients. Mix thoroughly. Then using a tablespoon scoop-up some of the mixture and tip onto individually-prepared leaves (you can also use common dock leaves for this) or aluminium foil and arrange in a steamer.
Steam for 45 minutes (or until cooked). As for a cake test by inserting a skewer into the centre of one of the ukpos. If the skewer comes out clean then the ukpo is cooked.
