Layers of fresh tortilla chips, juicy chicken, queso, pico de gallo, and more are cooked as a traybake for a quick and easy starter or meal. The ‘Mexican blend’ cheese is an American mix of grated cheeses that typically contains Monterey Jack, cheddar, queso quesadilla, and asadero. A mix of grated mozzarella and mild cheddar would work at a pinch.
Ingredients:
32 home-made tortilla chips or store-bought (about 32 chips)
3 boneless skinless chicken breasts cut into small strips
25g taco seasoning
1 tbsp olive oil
1 tbsp tequila
1 tbsp lime juice
75g chopped onion
4 tbsp white queso
200g grated Mexican blend cheese
250ml pico de gallo
4 tbsp freshly-chopped coriander
toppings: black beans, Mexi-corn (esquites), jalapenos, refried beans, olives, or anything you love!
garnishes: sour cream, avocado, guacamole, salsa
Method:
Pre-heat your oven to 180°C.
Place a large, heavy-based, frying pan over medium/high heat. Once hot add the olive oil, followed by the chicken. Now toss in the tequila, taco seasoning, and lime juice. Stir to combine then cook the chicken until fully cooked through (about 4-5 minutes). Turn out onto a plate and set aside.
Arrange the tortilla chips in the base of a large, oiled, roasting tin or baking tray with sides. Lay them pretty much in a single layer, only slightly overlapping.
Arrange the chicken and onion mixture over the tortilla chips. Now drizzle over the white queso (be sparing here, a little goes a long way and you don’t want the nachos to get soggy).
Now sprinkle over the grated cheese. Finally top with the pico de gallo and the coriander (if you want any extra toppings, add them now).
Transfer to the centre of your pre-heated oven and bake for about 10–15 minutes, rotating the pan half-way through. When done, you want the cheese fully melted and the chips starting to turn brown on the edges.
Remove from the oven and add your favourite toppings: sour cream, guacamole, salsa.
