Thé à la Menthe (Mauritanian Mint Tea)

Ingredients:

4 tsp Chinese green tea
leaves from 1 sprig of fresh mint
4 sugar cubes

Method:

Place the tea in a warmed metal teapot and pour in 250ml boiling water. Swirl the tea in the pot then strain out. Discard the liquid (this first infusion is butter) and return the moistened tea leaves to the pot.

Pour in 400ml boiling water into the teapot and set aside to infuse. Pour the tea into four heat-proof glasses, raising and lowering the pot so that the tea foams. Give this first tea to your guests as you prepare the strong tea in the pot.

Pour 500ml cold water in the teapot then sit the teapot on your fire to boil. Add the mint leaves and four lumps of sugar. Stir to mix, take off the heat and set aside to infuse for 10 minutes.

Pour the tea into four fresh glasses, again raising and lowering the teapot to make a foam. Serve immediately to accompany the meal. This second tea is much milder in taste and is better for accompanying the food.
