This is a classic Tex-Mex recipe for a taco casserole dish with minced beef, tater tots, refried beans, and lots of cheese will become a new favourite for weeknight suppers. As a casserole it’s a low-stress and easy to prepare.
Ingredients:
500g minced beef (but any minced red meat would work and mutton or venison are good)
1 small yellow onion, diced
2 tbsp taco seasoning
500g refried beans (tinned works, too)
500g tater tots
400g tin diced tomatoes, drained
225g mature cheddar cheese, grated
Optional toppings:
shredded lettuce
black olives
tortilla chips
sour cream salsa
1 roma (plum) tomato diced
pickled jalapeño chillies
Method:
Pre-heat your oven to 180°C. Grease a 22x33cm baking dish with oil and set aside.
Heat a large heavy-based frying pan over medium heat. When the pan is hot, add the minced beef and diced onion. Cook until the meat is browned and onions are soft and translucent. Drain any excess fat from the pan, if necessary.
Reduce the heat to low and stir in the taco seasoning and diced tomatoes. Bring to a simmer and cook for 5 minutes.
Spread the refried beans over the base of the prepared baking dish. Arrange the tater tots in a single layer on top of the beans.
Spread the meat mixture evenly on top of the tater tots.
Sprinkle the grated cheddar cheese over the meat mixture. Cover, then transfer to the centre of your pre-heated oven bake for 20 minutes. Uncover the dish, return to the oven bake for an additional 10–15 minutes or until cheese has melted and is beginning to colour.
Remove from the oven then top with your choice of lettuce, black olives, chips, sour cream, salsa, pickled jalapeños and diced Roma tomato.
