The combination of tender beef and umami-packed blue cheese is a classic that’s ideally suited to a romantic dinner like Valentine’s day. It’s also ultra-quick to make; ready and on the plate in 20 minutes.

Prep time 5 minutes/Cook time 15 minutes/serves 2

Ingredients:

2 thick sirloin steaks
2 tbsp balsamic vinegar
1 tbsp olive oil
2 tsps full-fat crème fraîche
50g (3 tbsp) creamy blue cheese
1 tsp chopped fresh curly parsley, plus extra to garnish

Method:

Place the steaks in a large, non-metallic dish and drizzle over the balsamic vinegar and olive oil. Set aside to marinate for 10 min.
Meanwhile, spoon the crème fraîche into a bowl, crumble in the cheese and stir into the crème fraîche with 1 tsp parsley. Season with freshly-ground black pepper and set aside.

Preheat your grill (broiler) to high. Heat an ovenproof griddle or frying pan over a high heat. When the pan searing hot, add the steaks and cook for 2 min each side for medium-rare.

Spoon the cheese mixture on top of each steak and pop under the grill for 1-2 minutes.

Divide between 2 warmed plates, scatter with the extra parsley and serve with a mixed salad and some chips (fries).
