Ingredients:
3 vine tomatoes (halved)
10 cherry tomatoes (halved)
30g jarred jalapeños
½ onion (red or white)
1 small chilli
½ lime
1 garlic clove
handful of fresh coriander (plus more to garnish)
1 tsp sea salt
Method:
Combine all the ingredients (except the tomatoes) in a food processor and pulse to chop finely.
Add the tomatoes and carefully pulse a few tines until the tomatoes and chopped and combined with the other ingredients (but be careful not to purée them). Alternatively, you can finely chop all the ingredients individually using a sharp knife then mix together in a bowl.
Scoop the chopped ingredients into a bowl and season to taste with salt and freshly-ground black pepper. Garnish with chopped fresh coriander leaves then serve accompanied by tortilla chips.
