Spicy Papaya

Spicy Papaya is a traditional Ghanaian recipe for a classic if rather unusual dessert of papaya flesh that's diced, blended with ginger, rum, sugar and lemon juice and which is chilled and served with mint leaves. Ingredients:

650g papaya
5 tbsp rum
3 tbsp finely-grated ginger
25g brown sugar
5 tbsp lemon juice
6 fresh mint leaves

Method:

Peel and halve the papaya. Remove the seeds then finely dice the flesh.

Turn the papaya into a bowl and mix in the ginger, rum, lemon juice and sugar. Toss to combine then divide between dessert dishes.

Chill for at least 2 hours before serving. Garnish with the shredded mint leaves and serve.
