Shopska Salad is a traditional Bulgarian recipe for a classic salad of onion, tomatoes and cheese in oil that's served with cucumber and garnished with a chilli and which is typically served as an accompaniment. Ingredients:
1 onion, peeled and finely chopped
500g tomatoes, blanched, peeled and sliced
200g mature cow or sheep's cheese, grated or crumbled
50ml oil
1 small hot chilli, sliced into thin rounds
1 cucumber, peeled and diced
salt
Method:
Combine the onion and tomato slices in a serving dish. Drizzle over the oil and toss to combine. Season to taste with salt then mix in the cucumber pieces.
Toss once more then garnish with the grated or crumbled cheese. Finish by topping with the chilli rounds.
Typically this is served with cornbread, baked potatoes, French toast and cork-shaped minced meat patties known as tchevapchitchi.
