Sambal Kacang (Indonesian Peanut Sauce) is a traditional Indonesian recipe for a classic sauce made from a blend of dee-fried peanuts, garlic, chillies, aromatic ginger ad kecap manis that's finished with lime juice. Method:

Combine the peanuts, garlic, chillies and aromatic ginger in a blender or coffee grinder and process until smooth or coarse (depending on personal preference).

Scrape the mixture into a pan and mix with the lime leaves, soy sauce, salt and water. Bring to a simmer and cook over low heat for about 1 hour, stirring frequently to prevent the ingredients from sticking.

Take off the heat and allow to cool. Turn into a bowl and stir in the lime juice just before use.
